1.先准备一包水煮肉片的调料包。我很喜欢蜀味源的,特别正宗特别香。

2.准备包川粉,约200克,也可以用红薯粉条。

3.黑木耳切小块。

4.莴苣杆切薄片。

5.金针菇剪去菇脚,洗净备用。

6.瘦猪肉片成薄片。

7.将腌料包倒入瘦肉中,抓匀腌制备用。

8.烧锅开水,放些盐,滴几滴油,放入黑木耳煮3分钟。

9.煮好的黑木耳过下凉开水,沥干水份,铺在砂锅底部。

10.另烧一锅新开水,放点盐,滴几滴油,下入莴苣片抄水30秒。

11.抄好水的莴苣片,过下凉开水,沥干水份铺在黑木耳上。

12.下金针菇煮开1分钟。

13.捞起金针菇,过凉开水后铺在莴苣片上。

14.洗净的锅中,加适量清水,放入调料包,中火煮开。

15.下川粉煮2分钟。

16.调大火,下腌制好的肉片,煮开。

17.将煮好的肉片及汤汁倒入砂锅中。

18.将干料包集中的倒在砂锅的中间,方便等下浇热油。

19.撒点葱花在干料上。

20.锅中烧滚油炝在干料上,油温一定要高。我用大火烧油,差不多1分钟,其间会微微晃动下锅,让油受热更均匀。

还可以放豆腐皮,魔芋结等等材料,喜欢什么放什么,家里有什么就放什么,按各自的喜好来增减食材。
平时买排骨,总能剔下一块瘦肉,经常排骨煮完了,而瘦肉却剩下了,建议大家就拿来做这个水煮肉片。
